Day 1: Empty starter packet into 16 oz glass jar Add 3 tablespoons lukewarm room temp filtered water Mix well cover loosely for 1hr Add 2 tablespoons of unbleached bread flour and mix very well using wooden or rubber spoon/spatula (avoid using metal) Place rubber band around jar to track growth/rise. Place lid/coffee filter/paper towel over jar (to prevent gnats etc.) Wait 24hrs.
Day 2: First feed 2 tablespoons of unbleached bread flour, 1 tablespoon filtered lukewarm water.
Mix well (if too thick, add 1 tablespoon filtered lukewarm water) Mix well. Scrape down sides. Adjust marker. Replace cover. Wait 24 hours.
Day 3: Repeat day 2 steps. Wait 24 hours.
Day 4: Your starter should be more active and bubbly. Feed 1/2 cup unbleached bread flour and 1/4 cup lukewarm filtered water. Stir well. Scrape down sides. Move marker Replace cover.
Wait 24 hours.
Day 5: Move starter to bigger jar. Feed 1/2 cup unbleached bread flour and 1/4 cup lukewarm filtered water. Mix well. Scrape sides. Replace marker and replace cover. Starter should be active, bubbly, and doubled in size by 4-6 hours.
* if starter is active, bubbly and doubled in size, she is ready to bake with. (You can test readiness by dropping a small amount into a cup of warm water. If she floats, she's ready) Happy Baking!! If you have any questions reach out to me.
